Wild Rice Soup
3 tablespoons butter
1/2 medium onion, diced
3 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/3 cups chicken broth
2 cups milk
2 tablespoons sliced almonds
1 cup cooked wild rice
1/2 cup cubed, cooked chicken, turkey or ham
Melt butter in a heavy saucepan. Sauté onions until tender. Stir in flour, salt and pepper. Add chicken broth and milk. Stir until thickened. Add almonds, wild rice and meat. This soup can be made without the meat.
